How do I decide on a food prep table?

Refrigerated prep tables are very important for restaurants. Choosing the perfect one might be very difficult. Do I need a sandwich/salad table or a pizza table?

Well, these wide cutting boards on pizza prep tables would allow employees to slide pizzas that have large diameters down the length of the unit. Whereas the sandwich and salad prep tables usually have narrower cutting boards and they are capable of holding a larger amount of ingredients on them. Keep in mind that sandwich and salad prep tables have different purposes than pizza prep tables, but in general they are not as different as they actually sound. Sandwich prep tables come with 1/6 size food pans in the top storage area whereas pizza prep tables are designed for 1/3 size food pans so you can choose accordingly.

What pan capacity do I need?

The smallest prep table size is 27” wide and these will hold (6) sixth size pans. Most refrigerated prep tables are typically designed in such a way that they can hold standard-sized food pans with the sixth size being the most common and your prep table will include the pans when you purchase it. The dividers between the pans are usually adjustable so that you can change out to a different pan size if your usage of a specific ingredient is heavier than other ingredients.
